Our Noble series allows us to pay homage to the tradition behind fermenting and wine making, and tip our cap to the beauty of this process. The most intricate and technical fermentation and processes known will be executed, complimented by premium ingredients and elegant packaging.

SMOKED

Prior to the modern era, malted barley was often dried over beech wood flames. A handful of breweries maintained the practice, producing smoky Rauchbier for centuries. The first release in our Noble series explores this tradition featuring New England apples smoked in small batches over hand harvested beech wood, creating this rich cider with a toasty nose and a savory and smoky palate.

Trappish

Inspired by Trappist and Abbey Belgian Dark Strong Ales, swirling dark fruit aromas are central to this cider. This semi-dry offering is fermented with traditional Belgian yeast and Candi Sugars, creating an experience rich with toffee and caramel flavors. The dark amber color combined with the bright acidity of our apples resulted in one of our most complex and satisfying creations.

Rock Juice

Aside from apples and yeast, oysters and white wine are our favorite combination. This Chablis-inspired cider takes our New England apples and combines them with Chablis grapes before fermenting the blend on local oyster shells for the perfect balance of acid and minerality.
